Homemade Akara

Ingredients

280g peeled beans

70g onion

2 small scotch bonnet

1 teaspoon of salt

75mls water

Method

  1. Soak beans in warm water overnight.

  2. Pulse beans 2 to 3 times in blender. Discard skin.

  3. Add peeled beans, onions, scotch bonnet and water to the blender.

  4. Blend until smooth.

  5. Tip mixture into a bowl and mix for 3 to 5 minutes using a spoon or a hand mixer to incorporate air into mixture.

  6. Add salt and taste.

  7. Heat up oil. Scoop in batter using an ice cream scoop.

  8. Fry on both sides.

  9. Serve and enjoy.

Tip

*Soak beans overnight to remove indigestible sugars that causes flatulence.

*Pulse beans in a blender 3 to 5 times to remove skin.
