Ingredients
280g peeled beans
70g onion
2 small scotch bonnet
1 teaspoon of salt
75mls water
Method
Soak beans in warm water overnight.
Pulse beans 2 to 3 times in blender. Discard skin.
Add peeled beans, onions, scotch bonnet and water to the blender.
Blend until smooth.
Tip mixture into a bowl and mix for 3 to 5 minutes using a spoon or a hand mixer to incorporate air into mixture.
Add salt and taste.
Heat up oil. Scoop in batter using an ice cream scoop.
Fry on both sides.
Serve and enjoy.
Tip
*Soak beans overnight to remove indigestible sugars that causes flatulence.
*Pulse beans in a blender 3 to 5 times to remove skin.
