Nigerian Red Stew

Ingredients

1 can plum tomato

2 Red bell pepper

1 long paprika pepper

2 scotch bonnet (optional)

1 cup vegetable oil

1 brown onion

1Tbs Mixed herbs

2Tbs Chicken stock powder

Cooked protein of choice

Salt to taste


Method

Blend plum tomatoes, red bell peppers, paprika pepper, onion and scotch bonnet until smooth.

Add vegetable oil to the pot. Heat on medium heat. Add blended pepper mix.

Cover and allow to simmer for 15 minutes on medium heat.

Season your pepper mix. Cover and allow to cook for 15 minutes.

Add your choice of protein and mixed herbs. Cover and allow to cook for 10 minutes.

Allow stew to sit for 10 minutes before serving.

Serve and enjoy.
