Nigerian Jollof Rice

500g rice

1 can plum tomato

2 long paprika pepper

1 red bell pepper

1 medium sized brown onion

1 small red onion diced

2 scotch bonnet (preference)

500ml Chicken stock

2 bay leaves

1tsp nigerian curry powder

1tsp thyme

1tsp salt

1Tbs chicken powder

Vegetable oil for frying


Blend tomato, onion, scotch bonnet, paprika and red bell peppers. This is a jollof base pepper mix.

Place in a pot and allow to boil until 50% of liquid evaporates.

Heat half a cup of vegetable oil in a pot. Add diced red onion.

Fry on medium heat.

Add bay leaves, thyme and nigerian curry powder.

Add jollof base peppermix. Fry on medium heat and stir occasionally.

Add chicken powder and salt. Taste for seasoning and adjust if needed.

Add rice and chicken stock. Cook on medium heat and add water only when needed.

Cook rice until soft.

Serve and enjoy
